    The Beginning of Memory is an ancestral style pear cider made according to the shifts in the season. A duet of our early apples and pears are cured, ground and fermented on skins, then pressed and combined with our winter apple harvest in order to seed the second fermentation in bottle. The native sugars and wild yeasts found in our home farm orchard produce a unique méthode champenoise that harnesses the flavors of our alpine landscape.

    54% whole-cluster Marquette, 11% Louise Swenson, 11% St. Croix, 11% Marquette rosé, 5% La Crescent, 5% Plocher, 3% piquette

    Aromas of cherry cola play with basil and black licorice; everything is rich, yet fresh and bright. The wine is light-bodied, but with a silky smooth weight kept fresh by medium+ acidity.

    On the palate, Protolith wakes you up with popping-fresh red currants and acai, plus a nostalgic note of grape bubblegum. The finish is all freshly-cut green stems, with a lingering tingle.

    The aroma is complex and layered, with notes of apricot, peach, raisin, white pepper, tea, rose water, and floral attributes; you could keep your nose in this all day. This vintage is light-bodied and has delicacy and balance.

    On the palate, the tannins and acidity are integrated, with a tartness and texture reminiscent of tea and thick-skinned tropical fruits; you may be confused at first, but you’ll keep coming back.

    Serve room temp or slightly chilled.
